Chicken fajitas with broccoli and carrots

Chicken fajitas are a typical Mexican dish but this time we have added other vegetables, obtaining this recipe for chicken fajitas with broccoli and carrots.

The combination is spectacular, the result is a richer and a more nutritious dish that leaves you more satiated.

Ingredients

  • 9 wheat pancakes
  • 1 kilo boneless chicken breast
  • 3 large carrots,1 large broccoli
  • 1 red bell pepper cut into strips
  • 1 green bell pepper cut into strips
  • 1 jalapeño bell pepper
  • 3 cups water
  • 1 medium onion
  • 1/2 cup soy sauce
  • 2 finely chopped garlic
  • Extra virgin olive oil or vegetable oil, to taste
  • Salt and pepper to taste

Instructions

  1. Boil water in a pot and pour the chicken breast. Once ready, remove and reserve in a colander to drain the water, pour a teaspoon of oil in a large saucepan and heat over medium heat.
  2. Add the broccoli and the chopped carrots, cook for 5 minutes or until tender. Then add 1 more tablespoon of oil.
  3. Cut the chicken breast into medium strips, add salt and pepper to taste and fry until golden brown.
  4. Then add the chopped onion, jalapeño pepper and garlic and cook for 1 minute, add the green and red peppers to the same skillet and cook for 3 minutes or until cooked. In a bowl put the preparation of the chicken and vegetables, adding and mixing little by little soy sauce. Cook for 1 minute.
  5. Pour the mixture over the pancakes and that’s it! Enjoy these rich and nutritious carrot fajitas with broccoli and chicken.
