Carrot and cheese fritters

Carrot and cheese fritters are a quick and easy dish to prepare, combining seasonings and vegetables with cheeses such as provolone, manchego and goat cheese. To achieve an optimal consistency, we grate the carrot in almost the same proportion as the cheese, obtaining a soft and pleasant texture.

  • 3 carrots
  • 2 cups of provolone, manchego or goat cheese to taste
  • 3 tablespoons of wheat flour
  • 3 eggs
  • 1 medium onion
  • Salt to taste and ground black pepper to taste
  • ¼ cup olive oil


  1. Peel and finely grate the carrots and onion.
  2. In a medium bowl, add the grated carrots and your choice of cheese to taste.
  3. Crack the shells of the eggs and add them to a bowl. Add the wheat flour, pepper, onion and salt. Mix the ingredients well with the help of a wooden spoon until everything is integrated.
  4. Pour the vegetable oil into a non-stick frying pan and heat over medium heat. Once the oil is hot, add a tablespoon of the mixture for each of the fritters.
  5. Cook each side for 45 seconds. Remove and place on absorbent paper. Repeat this action until all the fritter mixture is used and serve hot.
